The structural reason craft classes are scarce

These are built for residents committing to a season of Tuesday nights, taught in Swedish, not for a visitor who wants one English-language afternoon session. A studio offering a genuine single drop-in slot with no weeks-ahead booking is rare enough that you should verify it directly before counting on it.
Where the tourist-facing options actually are
What Gothenburg does offer, in genuine, bookable form, sits in food and drink rather than craft.
Bryggeribussen, the Brewery Bus, runs a hop-on hop-off shuttle on selected Saturdays connecting five of the city’s craft breweries: Poppels, Spike Brewery, Majornas Bryggeri, Vega Bryggeri, and Stigbergets. It is closer to a tasting circuit than a single workshop, but it is the most structured way to sample the city’s beer scene in one outing. For something sweeter, Göteborgs Choklad & Karamellfabrik, based in the historic Kronhusbodarna craft quarter by Kronhuset, runs scheduled bean-to-bar chocolate tastings alongside hands-on fudge and hard-candy demonstrations. And da Matteo on Magasinsgatan, the city’s pioneering specialty roaster, holds occasional public coffee cuppings, announced ahead of time rather than on a fixed weekly schedule.
The verdict
Do not build a Gothenburg trip around a hands-on craft afternoon; book that kind of class weeks ahead through a studio directly if it matters to you, or reframe the plan around a tasting instead of a making session. The tasting side of this list is genuinely good and needs no such lead time.
