Day 1: Capitole to the Garonne, the pink-brick core
Morning: Place du Capitole and the Capitole itself, the neoclassical city hall with eight Corinthian columns marking the eight medieval “capitouls,” free to cross and free inside on open days. Then Basilica of Saint-Sernin, the largest surviving Romanesque church in Europe, free nave, €2 for the crypt and ambulatory holding the saint’s relics.
Afternoon: The Jacobins, a Dominican Gothic brick church whose “palmier” vault fans a single column into 22 ribs overhead, €5, free the first Sunday of the month. Lunch at Marché Victor Hugo, ground-floor produce stalls and upstairs bistros doing market-fresh plates.
Evening: Walk the Pont Neuf, Toulouse’s oldest bridge despite the name, timed for sunset on the Garonne. Dinner built around cassoulet made with saucisse de Toulouse, budget roughly €20-30 for a proper version away from the square.
Day 2: Cité de l’Espace and the Canal du Midi
Morning into afternoon: Cité de l’Espace, the space park on the eastern edge of the city, built around a full-scale 55m Ariane 5 replica, a walk-through Mir space station module, and two planetariums. €24.50 in high season, €21.50 in low season, budget 3-4 hours, it’s not a quick stop.
Evening: Back in the centre, walk or cycle the Canal du Midi towpath near the Port de l’Embouchure, free, shaded, and a genuinely different pace from the morning’s crowds. A last dinner in Carmes-Saint-Étienne rather than back on the square.
Is 2 days enough for Toulouse?
Two days covers the essential pink-brick core and one aerospace half-day, but not a day trip. It’s the right length if Albi and Carcassonne aren’t on your list this time, or if you’re treating Toulouse as a stopover rather than the main event.
